🍑 Ingredients:

For the Peach Filling:

  • 6–8 fresh peaches (or 2 cans, drained; or 1 bag frozen, thawed)

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg (optional)

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch (for thickening)

For the Cobbler Batter:

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 3/4 cup milk (whole milk preferred)

  • 1/2 tsp vanilla extract (optional)

  • 1 stick (1/2 cup) unsalted butter

  1. Preheat your oven to 350°F (175°C).
    Place the butter in a 9×13-inch baking dish and let it melt in the oven while preheating. Keep an eye on it so it doesn’t brown.

  2. Prepare the peaches:

    • If using fresh peaches, peel (optional), pit, and slice.

    • In a saucepan over medium heat, combine peaches with sugars, cinnamon, nutmeg, lemon juice, and cornstarch.

    • Bring to a simmer for 5 minutes until syrupy. Remove from heat.

  3. Make the batter:

    • In a medium bowl, whisk together flour, sugar, baking powder, and salt.
