Here’s a super simple and flavorful side dish: Parmesan Baked Potatoes! These are crispy on the outside, fluffy inside, and coated with a golden, cheesy crust. Perfect for pairing with chicken, steak, or a cozy vegetarian meal.

πŸ“ Ingredients:

  • 4 medium russet or Yukon gold potatoes, halved

  • 1/3 cup grated Parmesan cheese (freshly grated works best)

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika (optional, for color)

  • 1/4 tsp black pepper

  • 1/4 tsp salt

  • 2–3 tbsp melted butter or olive oil

  • Fresh herbs (parsley, chives, or thyme) for garnish

1. Preheat Oven:
  • Preheat to 400Β°F (200Β°C).

  • Line a baking sheet or a 9×13 dish with parchment paper or lightly grease it.

2. Make the Parmesan Crust:
  • In a small bowl, mix the Parmesan, garlic powder, paprika, salt, and pepper.

  • Pour melted butter onto the baking sheet and spread it out evenly.

  • Sprinkle the Parmesan mixture over the butter in a thin, even layer.

3. Prepare the Potatoes:
  • Place the potato halves cut side down on top of the Parmesan mixture.

  • Press lightly so the cheese sticks to the surface.

4. Bake:
  • Bake for 35–40 minutes, or until the potatoes are tender and the bottoms are golden and crispy.

  • Let rest for 5 minutes before removing β€” the cheese crust will set as it cools.

5. Serve:
  • Use a spatula to gently lift the potatoes.

  • Garnish with fresh herbs or extra Parmesan if desired.

  • Serve with sour cream, ranch, or garlic aioli on the side.
