Ingredients:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tbsp sugar

  • 1/2 tsp garlic powder

  • 1/2 tsp Old Bay seasoning (optional, for seafood flair)

  • 1/2 tsp salt

  • 1 cup shredded sharp cheddar cheese

  • 1 cup whole milk

  • 1/3 cup unsalted butter, melted

  • 1 egg

Garlic butter topping (optional but encouraged):

  • 2 tbsp melted butter

  • 1/2 tsp garlic powder

  • 1 tsp dried parsley

Ingredients:

  • 1 tbsp butter or olive oil

  • 1/2 cup diced onion

  • 1/2 cup diced celery

  • 1/2 cup diced carrots

  • 2 cloves garlic, minced

  • 2 tbsp flour

  • 1 cup seafood stock or low-sodium chicken broth

  • 1/2 cup milk or half-and-half

  • 1/2 tsp Old Bay seasoning (or more to taste)

  • 1/2 cup frozen peas

  • 1 cup cooked shrimp, chopped

  • 1/2 cup lump crab meat or imitation crab, flaked

  • Salt & pepper, to taste

  • Optional: squeeze of lemon juice or a dash of hot sauce

1. Make the Seafood Filling

  • In a skillet over medium heat, melt butter.

  • Add onions, celery, carrots, and cook until softened (5–7 mins).

  • Add garlic and cook 1 minute.

  • Stir in flour and cook 1 more minute to form a roux.

  • Slowly whisk in seafood stock and milk; bring to a simmer and cook until thickened.

  • Add Old Bay, peas, shrimp, crab, salt, and pepper. Remove from heat. Let cool slightly.

2. Make the Muffin Batter

  • In a large bowl, whisk flour, baking powder, sugar, garlic powder, Old Bay, and salt.

  • Stir in shredded cheese.

  • In a separate bowl, whisk milk, melted butter, and egg. Add to dry ingredients and stir until just combined (don’t overmix).

3. Assemble the Muffins

  • Preheat oven to 375Β°F (190Β°C). Grease a 12-cup muffin tin.

  • Spoon a tablespoon of biscuit batter into each cup.

  • Add a spoonful of seafood filling (not too much β€” don’t overflow).

  • Top with another spoonful of biscuit batter to cover.

4. Bake
