Here’s a simple and delicious recipe for Mediterranean Spinach and Feta Crisps — perfect as a snack, appetizer, or party bite.


🧆 Mediterranean Spinach and Feta Crisps

📝 Ingredients:

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 3 cups fresh spinach (or 1 ½ cups frozen, thawed and drained)

  • ½ teaspoon dried oregano

  • Salt and pepper, to taste

  • 1 cup crumbled feta cheese

  • 1 sheet puff pastry, thawed

  • 1 egg, beaten (for egg wash)

  • Optional: sesame seeds or nigella seeds for garnish


👩‍🍳 Instructions:

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

  2. Prepare Filling:

    • Heat olive oil in a skillet over medium heat.

    • Add chopped onion and cook until soft (about 3-4 minutes).

    • Add garlic and cook for another 30 seconds.

    • Stir in spinach and cook until wilted (if using fresh), or heated through (if using frozen).

    • Season with oregano, salt, and pepper. Let cool slightly.

    • Stir in crumbled feta cheese.

  3. Assemble Crisps:

    • Roll out puff pastry on a lightly floured surface. Cut into small squares or circles (2–3 inches wide).

    • Place a spoonful of spinach-feta mixture in the center of each square.

    • Fold over into triangles or leave open-faced (like mini tarts), pressing edges to seal if folded. Use a fork to crimp if desired.

    • Brush tops with beaten egg. Sprinkle with sesame or nigella seeds (optional).

  4. Bake:

    • Bake for 15–18 minutes, or until golden brown and puffed.

    • Let cool slightly before serving.


🧀 Tips:

  • You can add a little grated mozzarella for a gooier filling.

  • Serve with a side of tzatziki or yogurt dip for extra Mediterranean flair.

  • Make ahead and freeze unbaked crisps for future snacking.
