Blueberry Sour Cream Coffee Cake

Blueberry sour cream coffee cake is a delightful and moist cake filled with fresh blueberries and a crumbly cinnamon streusel topping. It’s a perfect treat for breakfast, brunch, or dessert. Here’s a recipe to make this delicious coffee cake:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup sour cream
  • 2 cups fresh blueberries (or frozen blueberries, thawed and drained)
  • Zest of 1 lemon (optional)

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon

Instructions:

For the Streusel Topping:

  1. In a small bowl, mix together the flour, sugar, melted butter, and ground cinnamon until it forms a crumbly mixture. Set it aside.

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch (23×33 cm) baking pan.
  2. In a medium bowl, sift together the flour, baking powder, and baking soda. Set it aside.
  3. In a large mixing bowl, cream the softened butter and 1 cup of sugar until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gently fold in the sifted dry ingredients until just combined.
  6. Carefully fold in the sour cream, followed by the fresh blueberries. If you’re using lemon zest, add it now.

To Assemble:

  1. Pour half of the cake batter into the prepared baking pan and spread it out evenly.
  2. Sprinkle half of the streusel topping over the batter.
  3. Add the remaining cake batter over the streusel layer and spread it evenly.
  4. Top the cake with the remaining streusel mixture.

To Bake:

  1. Bake the coffee cake in the preheated oven for about 45-50 minutes, or until a toothpick or cake tester inserted into the center comes out clean, and the cake is golden brown.
  2. Allow the coffee cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

To Serve:

Slice and serve your blueberry sour cream coffee cake. It’s perfect with a cup of coffee or tea for a delicious and comforting treat.
