Birria Wings with Consome

Birria wings with consomé is a delicious and trendy twist on traditional birria tacos. The birria consomé (broth) is used to dip or dunk the birria-style chicken wings, creating a flavorful and satisfying meal. Here’s a recipe to make birria wings and consomé:

Ingredients for the Birria Wings:

  • 2-3 pounds of chicken wings
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons birria seasoning (can be store-bought or homemade using a mix of dried chiles, spices, and vinegar)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tomato sauce
  • 1 cup chicken broth

Ingredients for the Consomé:

  • Reserved birria cooking liquid (from the birria wings)
  • Additional chicken or beef broth (as needed for desired consomé volume)
  • 1-2 dried chiles (such as guajillo or ancho), optional for added heat and flavor
  • Salt and pepper to taste

Instructions:

1. Prepare the Chicken Wings:

  • In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat. Add the chopped onion and cook until translucent.
  • Add the minced garlic, birria seasoning, cumin, oregano, salt, and pepper. Stir for a minute or until fragrant.
  • Add the chicken wings and brown them on all sides.
  • Stir in the tomato sauce and chicken broth. Bring to a simmer.

2. Simmer the Birria Wings:

  • Reduce the heat to low, cover, and let the birria wings simmer for 45 minutes to 1 hour or until the chicken is tender and fully cooked. If the liquid reduces too much during cooking, you can add more chicken broth to maintain a good amount of sauce.

3. Make the Consomé:

  • Once the chicken wings are done, remove them from the pot, leaving the cooking liquid behind.
  • If you’d like, add dried chiles to the cooking liquid for extra flavor and heat.
  • Use an immersion blender to blend the cooking liquid until smooth. If the consomé is too thick, you can add more chicken or beef broth to reach your desired consistency.
  • Season the consomé with salt and pepper to taste.

4. Serve:

  • Serve the birria wings with a side of the consomé for dipping.
  • You can also serve the birria wings in tortillas as tacos, garnished with chopped onions, cilantro, and a squeeze of lime.
