Ingredients:

  • 1 cup heavy cream
  • 4 ounces (about 115g) dark chocolate (70% cocoa or higher), chopped
  • 2 tablespoons unsweetened cocoa powder
  • 2-3 tablespoons powdered erythritol or your preferred low-carb sweetener (adjust to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Melt the Chocolate:
    • In a heatproof bowl, melt the chopped dark chocolate. You can do this by placing the bowl over a pot of simmering water (double boiler) or by melting it in short bursts in the microwave. Stir until smooth and set aside to cool slightly.
  2. Whip the Cream:
    • In a separate bowl, whip the heavy cream until it forms stiff peaks.
  3. Combine Ingredients:
    • Gently fold the melted chocolate into the whipped cream until well combined.
  4. Add Cocoa and Sweetener:
    • Sift in the cocoa powder and add the powdered sweetener. Again, gently fold until everything is well combined. Taste and adjust the sweetness if needed.
  5. Add Vanilla and Salt:
    • Stir in the vanilla extract and a pinch of salt. The salt enhances the chocolate flavor.
  6. Chill:
    • Transfer the mousse mixture into serving glasses or bowls.
    • Refrigerate for at least 2-3 hours, or until the mousse has set.
  7. Serve:
    • Optionally, you can garnish with a dollop of whipped cream, a sprinkle of cocoa powder, or some grated dark chocolate before serving.
