Stuffed Hasselback potatoes

Stuffed Hasselback potatoes are a delightful twist on the classic Hasselback potato, where the potato is thinly sliced and roasted to a crispy perfection. Stuffing these potatoes with cheese and herbs adds a burst of flavor. Here’s a recipe for Stuffed Hasselback Potatoes:

Ingredients:

  • 4 large russet potatoes
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2-3 tablespoons fresh herbs (e.g., chives, rosemary, or thyme), finely chopped
  • Sour cream and additional chopped herbs for garnish (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
  3. Place a potato between two wooden chopsticks or two wooden spoon handles to create a guide for slicing. This will help prevent you from slicing all the way through the potato.
  4. Using a sharp knife, make thin, evenly spaced slices along the length of the potato. Make sure not to cut all the way through; the slices should be connected at the bottom.
  5. In a small bowl, mix the melted butter, minced garlic, salt, and black pepper.
  6. Carefully brush the potato with the butter and garlic mixture, making sure to get it between the slices.
  7. Bake the potatoes in the preheated oven for 30 minutes.
  8. Remove the potatoes from the oven and gently separate the slices slightly with a fork. Brush the remaining garlic butter over the potatoes.
  9. Mix the cheddar cheese, Parmesan cheese, and fresh herbs in a bowl.
  10. Carefully stuff the cheese and herb mixture between the potato slices.
  11. Return the potatoes to the oven and bake for an additional 20-30 minutes or until they are crispy on the outside and tender on the inside. The internal temperature of the potatoes should be around 210°F (99°C).
  12. Once the potatoes are done, garnish them with a little more cheese, fresh herbs, and a dollop of sour cream if desired.

Serve your Stuffed Hasselback Potatoes as a delicious side dish for a variety of meals. The combination of crispy potato slices, melted cheese, and aromatic herbs makes this dish a real crowd-pleaser.
