Shrimp and grits

Shrimp and grits is a classic Southern dish known for its rich, creamy grits and flavorful shrimp. Here’s a basic recipe for making shrimp and grits:

Ingredients:

For the Grits:

  • 1 cup stone-ground grits (not instant)
  • 4 cups water
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese (optional)

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • Juice of 1/2 lemon
  • Salt and black pepper, to taste
  • 1/2 teaspoon cayenne pepper (optional, for a bit of heat)
  • Bacon bits or crumbled bacon for garnish (optional)

Instructions:

For the Grits:

  1. In a large saucepan, bring the water and milk to a boil.
  2. Gradually whisk in the stone-ground grits while stirring to avoid lumps.
  3. Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes, or until the grits are thick and creamy.
  4. Stir in the butter, and season with salt and black pepper to taste.
  5. If desired, mix in the shredded cheddar cheese until it’s melted and the grits are creamy and cheesy.
  6. Keep the grits warm while you prepare the shrimp.

For the Shrimp:

  1. In a large skillet, melt the butter over medium-high heat.
  2. Add the minced garlic and cook for about 30 seconds, or until fragrant.
  3. Add the shrimp to the skillet and cook for about 1-2 minutes on each side, or until they turn pink and opaque.
  4. Remove the shrimp from the skillet and set them aside.
  5. In the same skillet, add the chicken broth, heavy cream, green onions, and chopped parsley. Stir and simmer for a few minutes to allow the sauce to thicken slightly.
  6. Return the cooked shrimp to the skillet.
  7. Squeeze the lemon juice over the shrimp and sauce, and season with salt, black pepper, and cayenne pepper if you want a bit of heat. Stir to combine and heat through.

Assembly:

  1. Serve the creamy grits in individual bowls.
  2. Top the grits with the shrimp and the sauce from the skillet.
  3. Garnish with bacon bits or crumbled bacon if desired.
