Beef Ribs with Potatoes and Corn

Beef ribs with potatoes and corn make for a hearty and satisfying meal. Here’s a simple recipe that combines these ingredients:

Ingredients:

  • 2 lbs beef ribs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4-5 potatoes, peeled and cut into chunks
  • 2 ears of corn, husked and cut into smaller pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef ribs with salt and pepper.
  3. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef ribs on all sides for a few minutes until they get a nice sear. Remove the ribs from the pot and set them aside.
  4. In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until the onions become translucent.
  5. Add the beef ribs back to the pot. Pour in the beef broth to partially cover the ribs.
  6. Add the potatoes and corn pieces to the pot around the beef ribs.
  7. Sprinkle paprika, dried thyme, and dried rosemary over the mixture.
  8. Cover the pot with a lid and transfer it to the preheated oven.
  9. Bake for approximately 2 to 2.5 hours or until the beef is tender and the potatoes and corn are cooked through.
  10. Check for doneness and adjust seasoning if needed.
  11. Remove the pot from the oven. Carefully place the beef ribs, potatoes, and corn onto a serving platter.
  12. If desired, garnish with chopped fresh parsley before serving.
