An apple and cinnamon cake is a delightful treat, especially during the fall season. Here’s a simple recipe to make one:

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup plain yogurt or sour cream
  • 2 medium apples, peeled, cored, and diced
  • 1/2 cup chopped nuts (optional, like walnuts or pecans)

For topping (optional):

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt or sour cream. Mix until just combined. Be careful not to overmix.
  6. Gently fold in the diced apples and chopped nuts (if using) into the batter.
  7. Pour the batter into the prepared cake pan, spreading it evenly.
  8. If using the topping, mix together the sugar and cinnamon and sprinkle it over the top of the cake batter.
  9. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
  10. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.

This moist and flavorful apple cinnamon cake is perfect for dessert or as a sweet treat with a cup of tea or coffee. You can also serve it with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgence!
