Rosettes

Rosettes are delicate, crispy, deep-fried pastries that are often made during the holiday season. They are light, airy, and dusted with powdered sugar. Here’s a basic recipe to make these beautiful treats:Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Oil for frying (vegetable or canola oil works well)
  • Powdered sugar for dusting

Equipment:

  • Rosette iron molds (various shapes)
  • Deep fryer or deep, heavy-bottomed pot for frying
  • Slotted spoon
  • Paper towels

Instructions:

  1. Prepare the Batter:
    • In a mixing bowl, whisk together the flour, granulated sugar, and salt.
    • In a separate bowl, beat the eggs, then add the milk and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth batter. The consistency should be similar to heavy cream. Let the batter rest for 30 minutes at room temperature.
  2. Heat the Oil:
    • Fill a deep fryer or heavy-bottomed pot with about 2-3 inches of oil. Heat the oil to 375°F (190°C).
  3. Prepare the Rosette Irons:
    • Dip the rosette iron molds into the hot oil for a few minutes to heat them.
    • Remove the molds from the oil and let excess oil drip off. Pat them dry with paper towels.
  4. Dip and Fry:
    • Dip the heated rosette iron molds into the batter, making sure not to cover the top edge of the molds. The batter should adhere but not completely cover the top edge.
    • Immediately immerse the batter-coated molds into the hot oil. Fry the rosettes until they turn a light golden brown, about 30-60 seconds. Use the slotted spoon to gently remove them from the oil.
  5. Drain and Cool:
    • Place the fried rosettes on paper towels to drain excess oil. Allow them to cool completely.
  6. Dust with Powdered Sugar:
    • Once cooled, dust the rosettes generously with powdered sugar using a fine-mesh sieve or sifter.
  7. Repeat and Enjoy:
    • Continue dipping the rosette iron molds into the batter, frying, and dusting with powdered sugar until all the batter is used.
  8. Serve:
    • Serve the crispy and delicate rosettes as a delightful treat during the holiday season or on special occasions.

These rosettes are a lovely addition to any festive dessert platter and are sure to impress with their intricate shapes and delightful crunch!
