Classic potato pancakes, also known as “latkes” in Jewish cuisine or “placki ziemniaczane” in Polish cuisine, are a delightful dish. Here’s a simple recipe:
Ingredients:
- 4 large potatoes, peeled
- 1 onion
- 2 eggs
- 4 tablespoons all-purpose flour or matzo meal (for a gluten-free option)
- 1 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- Oil (for frying)
Instructions:
- Grate the potatoes and onion using a box grater or a food processor. You can also use a kitchen towel or cheesecloth to squeeze out excess moisture from the grated potatoes.
- Transfer the grated potatoes and onion to a mixing bowl. Add the eggs, flour (or matzo meal), salt, and black pepper. Mix everything together until well combined.
- Heat a generous amount of oil in a skillet over medium-high heat. You want enough oil to cover the bottom of the pan.
- Once the oil is hot, take a spoonful of the potato mixture and carefully place it in the skillet, flattening it slightly with the back of the spoon to form a pancake shape. You can also use your hands to shape them.
- Fry the pancakes for about 3-4 minutes on each side or until they are golden brown and crispy.
- Once cooked, transfer the pancakes to a paper towel-lined plate to drain excess oil.
- Continue the process, adding more oil to the pan as needed, until all the potato mixture is used.
- Serve the potato pancakes hot, optionally with sour cream, applesauce, or your preferred toppings.
These potato pancakes are best served fresh and hot. Enjoy this classic and delicious dish!
