Shrimp Fettuccine

Certainly! Here’s a simple recipe for shrimp fettuccine:Ingredients:

  • 12 oz (340g) fettuccine pasta
  • 1 lb (450g) large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup chicken broth or white wine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the fettuccine pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil and butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Pour the chicken broth (or white wine) into the same skillet and deglaze it, scraping up any browned bits from the bottom. Let it simmer for a couple of minutes to reduce slightly.
  5. Reduce the heat to low and stir in the heavy cream. Allow the cream to heat through but avoid boiling it.
  6. Gradually sprinkle in the Parmesan cheese while stirring constantly until it melts and thickens the sauce. If the sauce becomes too thick, you can add a bit of the reserved pasta water to reach your desired consistency.
  7. Return the cooked shrimp to the skillet and toss them in the sauce to coat evenly.
  8. Add the cooked fettuccine to the skillet and gently toss everything together until the pasta is coated in the sauce.
  9. Taste and adjust seasoning if needed.
  10. Garnish with chopped fresh parsley before serving.
