Meatball and potato casserole

Ingredients:

For the Meatballs:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

For the Casserole:

  • 4 cups potatoes, peeled and sliced into thin rounds
  • 1 onion, thinly sliced
  • 2 cups shredded mozzarella cheese
  • 1 can (14 oz) diced tomatoes, drained
  • 1 can (8 oz) tomato sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Olive oil for drizzling
  • Fresh parsley for garnish (optional)

Instructions:

For the Meatballs:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Meatballs:
    • In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, egg, oregano, basil, salt, and pepper. Mix until well combined.
  3. Shape Meatballs:
    • Shape the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  4. Bake Meatballs:
    • Bake in the preheated oven for 15-20 minutes or until the meatballs are cooked through and browned on the outside.

For the Casserole:

  1. Layer Potatoes:
    • In a greased casserole dish, layer the sliced potatoes.
  2. Add Onion and Garlic:
    • Scatter sliced onions and minced garlic over the potatoes.
  3. Sprinkle Herbs:
    • Sprinkle dried thyme and rosemary over the potatoes and onions.
  4. Season with Salt and Pepper:
    • Season the potato mixture with salt and black pepper.
  5. Add Meatballs and Tomatoes:
    • Place the baked meatballs on top of the potato mixture. Add drained diced tomatoes.
  6. Pour Tomato Sauce:
    • Pour the tomato sauce over the meatballs and potatoes.
  7. Top with Cheese:
    • Sprinkle shredded mozzarella cheese over the entire casserole.
  8. Drizzle with Olive Oil:
    • Drizzle olive oil over the top to help with browning.
  9. Bake:
