Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup plain Greek yogurt or sour cream
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 1 tablespoon fresh chives, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
  3. Add Cheese:
    • Stir in the shredded cheddar cheese until evenly distributed in the dry ingredients.
  4. Combine Wet Ingredients:
    • In a separate bowl, whisk together the milk, melted butter, eggs, and Greek yogurt (or sour cream).
  5. Combine Wet and Dry Mixtures:
    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Do not overmix; it’s okay if the batter is a bit lumpy.
  6. Fill Muffin Cups:
    • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  7. Optional Parmesan Topping:
    • If using, sprinkle grated Parmesan cheese on top of each muffin for an extra cheesy crust.
  8. Bake:
    • Bake in the preheated oven for 18-20 minutes or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
  9. Cool:
    • Allow the cheese muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  10. Garnish and Serve:
