Farmer’s Casserole is a hearty and comforting dish that typically includes eggs, cheese, potatoes, and various other ingredients. Here’s a simple recipe for a delicious Farmer’s Casserole:

Ingredients:

  • 3 cups frozen shredded hash browns, thawed
  • 3/4 cup shredded cheddar cheese
  • 1 cup cooked ham, diced
  • 1/4 cup green onions, chopped
  • 1/4 cup red bell pepper, chopped
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Spread the thawed hash browns in the bottom of the prepared baking dish.
  3. Sprinkle shredded cheddar cheese over the hash browns.
  4. Evenly distribute the diced ham, chopped green onions, and red bell pepper over the cheese.
  5. In a bowl, whisk together the eggs, milk, salt, pepper, and dried thyme (if using).
  6. Pour the egg mixture over the ingredients in the baking dish.
  7. Bake in the preheated oven for about 40-45 minutes or until the center is set and the top is golden brown.
  8. Allow the casserole to cool for a few minutes before slicing and serving.
