Pineapple fritters are a delightful treat, combining the sweetness of pineapple with a crispy fried batter. Here’s a simple recipe for making pineapple fritters:

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 can (20 ounces) pineapple chunks, drained
  • Vegetable oil, for frying
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Prepare the Batter:
    • In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
    • In a separate bowl, whisk together the milk, egg, and vanilla extract until well combined.
    • Gradually pour the wet ingredients into the dry ingredients, stirring until you have a smooth batter.
  2. Prepare the Pineapple:
    • Drain the pineapple chunks well and pat them dry with paper towels. You want to remove as much excess moisture as possible to prevent the fritters from becoming soggy.
  3. Coat the Pineapple Chunks:
    • Gently fold the pineapple chunks into the batter until they are evenly coated.
  4. Fry the Fritters:
    • In a deep skillet or pot, heat vegetable oil to 350°F (175°C) over medium heat.
    • Using a spoon or scoop, carefully drop spoonfuls of the batter-coated pineapple chunks into the hot oil, making sure not to overcrowd the pan.
    • Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
    • Use a slotted spoon to transfer the fritters to a plate lined with paper towels to drain excess oil.
  5. Serve:
    • Serve the pineapple fritters warm.
    • Optionally, dust the fritters with powdered sugar before serving for added sweetness.
