Banana pudding pie is a delightful dessert that combines the creamy richness of banana pudding with a flaky pie crust. Here’s a simple recipe for making banana pudding pie:

Ingredients:

  • 1 pre-baked 9-inch pie crust (you can use store-bought or homemade)
  • 4 ripe bananas, sliced
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 2 cups cold milk
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Vanilla wafer cookies for garnish (optional)

Instructions:

  1. Prepare the Pie Crust:
    • Pre-bake the pie crust according to the package instructions, if using a store-bought crust, or prepare and bake a homemade crust. Allow it to cool completely before adding the filling.
  2. Make the Banana Layer:
    • Arrange half of the sliced bananas in the bottom of the cooled pie crust, forming an even layer.
  3. Prepare the Vanilla Pudding:
    • In a mixing bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened, about 2 minutes.
  4. Assemble the Pie:
    • Pour half of the prepared vanilla pudding over the sliced bananas in the pie crust, spreading it into an even layer.
    • Layer the remaining sliced bananas over the pudding layer.
    • Pour the remaining pudding over the bananas, spreading it evenly.
  5. Chill the Pie:
    • Cover the pie with plastic wrap and refrigerate for at least 2 hours, or until the pudding is set and firm.
  6. Whip the Cream:
    • In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Top the Pie:
    • Once the pudding is set, spread the whipped cream over the top of the pie.
  8. Garnish:
    • Garnish the pie with additional banana slices and vanilla wafer cookies, if desired.
  9. Serve:
    • Slice and serve the banana pudding pie chilled.
