Creamy chicken lasagna is a delightful twist on the classic lasagna recipe, featuring layers of tender chicken, creamy sauce, cheese, and lasagna noodles. Here’s a simple recipe for making creamy chicken lasagna:

Ingredients:

  • 9 lasagna noodles
  • 2 cups cooked chicken breast, shredded or diced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups shredded mozzarella cheese
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the Lasagna Noodles:
    • Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  3. Prepare the Chicken Mixture:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
    • Add the cooked chicken to the skillet and cook for an additional 2-3 minutes, stirring occasionally. Remove from heat and set aside.
  4. Prepare the Creamy Sauce:
    • In the same skillet, add the chicken broth, heavy cream, grated Parmesan cheese, dried basil, dried oregano, salt, and pepper. Stir well to combine.
    • Bring the mixture to a simmer over medium heat, then reduce the heat and let it simmer for about 5 minutes, until slightly thickened.
  5. Assemble the Lasagna:
    • Spread a thin layer of the creamy sauce on the bottom of the prepared baking dish.
    • Place three lasagna noodles over the sauce.
    • Spread half of the chicken mixture over the noodles.
    • Pour half of the remaining creamy sauce over the chicken.
    • Sprinkle 1/3 of the shredded mozzarella cheese over the sauce.
    • Repeat the layers: noodles, remaining chicken mixture, remaining sauce, and another 1/3 of the shredded mozzarella cheese.
    • Top with the final layer of noodles and the remaining shredded mozzarella cheese.
  6. Bake the Lasagna:
    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
  7. Serve:
    • Let the creamy chicken lasagna cool for a few minutes before slicing.
    • Garnish with chopped fresh parsley, if desired, and serve hot.
