Ingredients:

For the Cinnamon Roll Crust:

  • 1 1/2 cups cinnamon roll crumbs (you can use store-bought cinnamon rolls and pulse them in a blender)
  • 4 tablespoons melted butter

For the Cheesecake Filling:

  • 16 ounces (2 packages) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup sour cream

For the Cinnamon Swirl:

  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or line it with parchment paper.
  2. Prepare the Cinnamon Roll Crust:
    • In a bowl, mix the cinnamon roll crumbs and melted butter until well combined.
    • Press the mixture into the bottom of the prepared springform pan to form an even crust. Set aside.
  3. Prepare the Cheesecake Filling:
    • In a blender, combine the softened cream cheese, granulated sugar, eggs, vanilla extract, ground cinnamon, and sour cream.
    • Blend the mixture until smooth and creamy, scraping down the sides of the blender as needed.
  4. Make the Cinnamon Swirl:
    • In a small bowl, mix together the brown sugar and ground cinnamon to create the cinnamon swirl.
  5. Assemble the Cheesecake:
    • Pour about half of the cheesecake batter over the cinnamon roll crust in the springform pan.
    • Sprinkle half of the cinnamon swirl mixture over the cheesecake batter.
    • Pour the remaining cheesecake batter over the cinnamon swirl layer.
    • Use a knife or toothpick to gently swirl the cinnamon mixture into the cheesecake batter to create a marbled effect.
  6. Bake the Cheesecake:
    • Place the springform pan on a baking sheet and bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  7. Cool and Chill:
    • Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight to set.
  8. Serve:
    • Once the cheesecake is fully set, release it from the springform pan and transfer it to a serving platter.
    • Slice and serve chilled.
