Butter pecan cookies are a delightful treat, especially with their rich, nutty flavor and buttery texture. Here’s a simple recipe to make delicious butter pecan cookies at home:

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans, toasted

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Toast the Pecans:
    • Spread the chopped pecans in a single layer on a baking sheet. Toast them in the preheated oven for about 5-7 minutes, or until fragrant and lightly golden. Keep an eye on them to prevent burning. Once toasted, remove from the oven and let them cool.
  3. Cream the Butter and Sugars:
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, using a hand mixer or stand mixer.
  4. Add the Eggs and Vanilla:
    • Add the eggs, one at a time, beating well after each addition. Then, mix in the vanilla extract until well combined.
  5. Combine the Dry Ingredients:
    • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
  6. Mix the Dough:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
    • Fold in the toasted chopped pecans until evenly distributed throughout the cookie dough.
  7. Chill the Dough (Optional):
    • For best results, you can chill the cookie dough in the refrigerator for about 30 minutes to 1 hour. Chilling the dough helps prevent the cookies from spreading too much during baking and allows the flavors to meld together.
  8. Form the Cookies:
    • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake the Cookies:
    • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
    • Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
