Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • Lemon slices (optional, for garnish)

Instructions:

  1. Prepare the Shrimp:
    • Pat the shrimp dry with paper towels and season them lightly with salt and pepper.
  2. Heat the Skillet:
    • In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and the skillet is hot.
  3. Cook the Garlic:
    • Add the minced garlic to the skillet and cook for about 1 minute, stirring constantly, until fragrant. Be careful not to let the garlic burn.
  4. Add the Shrimp:
    • Add the seasoned shrimp to the skillet in a single layer. Cook the shrimp for 2-3 minutes on one side until they turn pink and opaque.
  5. Flip the Shrimp:
    • Flip the shrimp over and cook for an additional 1-2 minutes on the other side until fully cooked through. The shrimp should be firm and opaque.
  6. Add Lemon Juice and Zest:
    • Squeeze the juice of one lemon over the shrimp in the skillet. Sprinkle the lemon zest evenly over the shrimp.
  7. Toss and Season:
    • Toss the shrimp gently in the lemon juice and zest until they are evenly coated. Taste and adjust the seasoning with salt and pepper if needed.
  8. Garnish and Serve:
    • Remove the skillet from the heat and garnish the lemon garlic shrimp with chopped fresh parsley and lemon slices, if desired.
  9. Serve Immediately:
    • Serve the lemon garlic shrimp hot, either as a main dish or as a topping for pasta, rice, or salad.
