Chicken Chow Mein

Chicken Chow Mein is a classic Chinese-American dish featuring stir-fried noodles, vegetables, and chicken. Here’s a simple recipe to make Chicken Chow Mein at home:

Ingredients:

For the Chow Mein Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 cup chicken broth or water

For the Chow Mein:

  • 8 ounces (about 225g) chow mein noodles or egg noodles
  • 2 tablespoons vegetable oil, divided
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers (any color)
  • 1 cup sliced mushrooms
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish, optional)
  • Sesame seeds (for garnish, optional)

Instructions:

  1. Prepare the Chow Mein Sauce:
    • In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and chicken broth (or water). Set aside.
  2. Cook the Noodles:
    • Cook the chow mein noodles or egg noodles according to the package instructions until al dente. Drain and set aside.
  3. Stir-Fry the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the sliced chicken breasts to the skillet and stir-fry for 4-5 minutes until cooked through. Remove the chicken from the skillet and set aside.
  4. Stir-Fry the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the minced garlic and thinly sliced onion to the skillet. Stir-fry for 1-2 minutes until fragrant.
    • Add the shredded cabbage, shredded carrots, sliced bell peppers, and sliced mushrooms to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Combine Chicken and Vegetables:
    • Return the cooked chicken to the skillet with the vegetables. Mix everything together.
  6. Add Noodles and Sauce:
    • Add the cooked chow mein noodles or egg noodles to the skillet with the chicken and vegetables.
    • Pour the prepared chow mein sauce over the noodles and stir-fry everything together until well combined. Cook for an additional 2-3 minutes to heat through.
  7. Adjust Seasoning and Serve:
    • Taste the Chicken Chow Mein and adjust the seasoning with salt and pepper, if needed.
    • Garnish with chopped green onions and sesame seeds, if desired.
  8. Serve Hot:
    • Serve the Chicken Chow Mein hot as a delicious and satisfying meal.
