Double strawberry cake

A double strawberry cake is a delightful treat that features the sweet and fruity flavor of strawberries in both the cake and the frosting. Here’s a recipe to make a delicious double strawberry cake:Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, diced

For the frosting:

  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup fresh strawberries, pureed
  • 1 teaspoon vanilla extract
  • Additional fresh strawberries for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced strawberries into the cake batter.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  9. Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. While the cakes are cooling, prepare the frosting. In a mixing bowl, beat together the softened butter, powdered sugar, pureed strawberries, and vanilla extract until smooth and creamy.
  11. Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  12. If desired, garnish the top of the cake with additional fresh strawberries.
  13. Slice and serve the double strawberry cake, and enjoy!
