For the Pork Chops:

  • 4 bone-in pork chops, about 1 inch thick
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Sautéed Onions and Pears:

  • 2 tablespoons butter or olive oil
  • 1 large onion, thinly sliced
  • 2 ripe pears, peeled, cored, and thinly sliced
  • Salt and pepper to taste
  • 1 tablespoon honey (optional)

Instructions:

  1. In a small bowl, whisk together soy sauce, olive oil, balsamic vinegar, minced garlic, dried thyme, salt, and pepper to create the marinade.
  2. Place the pork chops in a shallow dish or a large resealable plastic bag. Pour the marinade over the pork chops, making sure they are well coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, or ideally up to 4 hours, to marinate.
  3. While the pork chops are marinating, prepare the sautéed onions and pears. In a large skillet, melt the butter or heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 10-15 minutes.
  4. Add the sliced pears to the skillet with the onions. Cook for an additional 5-7 minutes, or until the pears are softened and caramelized. Season with salt and pepper to taste. If desired, drizzle with honey for added sweetness. Set aside.
  5. Preheat your grill to medium-high heat. Remove the pork chops from the marinade and discard the excess marinade.
  6. Grill the pork chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C) for medium doneness, or cook longer if desired.
  7. Once the pork chops are grilled to your liking, remove them from the grill and let them rest for a few minutes before serving.
  8. To serve, place each grilled pork chop on a plate and top with a generous portion of the sautéed onions and pears.
