Sourdough pancakes offer a tangy twist to the classic pancake recipe. Here’s how you can make sourdough pancakes using your sourdough starter:Ingredients:

  • 1 cup sourdough starter (fed and active)
  • 1 cup all-purpose flour
  • 1 cup milk (you can use buttermilk for extra tanginess)
  • 2 tablespoons melted butter or oil
  • 2 tablespoons sugar (optional)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • Butter or oil for cooking
  • Maple syrup or toppings of your choice

Instructions:

  1. Prepare the Sourdough Starter:
    • Ensure your sourdough starter is active and has been recently fed. It should be bubbly and active before using it in the pancake batter.
  2. Mix the Batter:
    • In a large mixing bowl, combine the sourdough starter, flour, and milk. Stir until well combined and smooth.
    • Cover the bowl with a clean kitchen towel or plastic wrap and let the batter ferment at room temperature overnight or for at least 8 hours. This fermentation process helps develop flavor and texture.
  3. Prepare the Pancake Batter:
    • After fermentation, the batter will be slightly bubbly and have a tangy aroma.
    • In a separate small bowl, whisk together the melted butter (or oil), sugar (if using), baking soda, salt, and eggs until well combined.
    • Add the egg mixture to the fermented sourdough batter. Stir until everything is fully incorporated and the batter is smooth.
  4. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to grease the surface.
    • Pour about 1/4 cup of the pancake batter onto the hot skillet for each pancake. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes.
    • Flip the pancakes and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
    • Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  5. Serve:
    • Serve the sourdough pancakes warm with maple syrup, fresh fruit, jam, or any other toppings of your choice.
