jam tarts

Posted on February 7, 2024
Here’s a simple recipe for classic jam tarts:Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 egg, beaten
  • Jam of your choice (such as strawberry, raspberry, or apricot)
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or tart pan.
  2. In a large mixing bowl, combine the flour and granulated sugar.
  3. Add the cold cubed butter to the flour mixture. Use your fingertips to rub the butter into the flour until the mixture resembles fine breadcrumbs.
  4. Add the beaten egg to the mixture and stir until it comes together to form a dough. If the dough seems too dry, you can add a little cold water, a teaspoon at a time, until the dough holds together.
  5. On a lightly floured surface, roll out the dough to about 1/8 inch thickness.
  6. Use a round cookie cutter or the rim of a glass to cut out circles of dough slightly larger than the size of the muffin tin or tart pan cups.
  7. Gently press each circle of dough into the prepared muffin tin or tart pan, making sure to press the dough into the bottom and up the sides of each cup.
  8. Spoon a small amount of jam into each pastry case, filling them about three-quarters full.
  9. If desired, you can use any leftover dough to create lattice tops or decorative shapes for your jam tarts.
  10. Place the muffin tin or tart pan in the preheated oven and bake for 12-15 minutes, or until the pastry is golden brown and the jam is bubbling.
  11. Remove the jam tarts from the oven and let them cool in the tin or pan for a few minutes before transferring them to a wire rack to cool completely.
  12. Once cooled, you can dust the jam tarts with powdered sugar if desired.

These jam tarts are perfect for serving as a sweet treat with tea or coffee, or for dessert. They’re simple to make and always a hit with both kids and adults. Enjoy!
