Velvety parmesan chicken meatballs

Velvety Parmesan chicken meatballs are a delicious and savory dish that’s perfect as a main course or served with pasta or vegetables. Here’s a simple recipe to make them:

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil, for cooking

For the sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, milk, egg, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Mix until well combined.
  3. Shape the chicken mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and golden brown.
  5. While the meatballs are baking, prepare the sauce. In a skillet, melt the butter over medium heat. Add the flour and whisk constantly for about 1-2 minutes to make a roux.
  6. Gradually whisk in the chicken broth and heavy cream, making sure to break up any lumps.
  7. Bring the sauce to a simmer and cook for 3-5 minutes, or until it thickens slightly.
  8. Stir in the grated Parmesan cheese until melted and well incorporated into the sauce. Season with salt and pepper to taste.
  9. Once the meatballs are cooked, add them to the skillet with the sauce and gently toss to coat them evenly.
  10. Serve the velvety Parmesan chicken meatballs hot, garnished with chopped parsley if desired.

These meatballs are delicious served over pasta, rice, or mashed potatoes, or even on their own as a flavorful appetizer or main dish. Enjoy!
