Oven-Baked Mashed Potato Cakes

Oven-baked mashed potato cakes are a delightful way to use up leftover mashed potatoes, and they make for a delicious side dish or snack. Here’s a simple recipe to make them:

Ingredients:

  • 3 cups leftover mashed potatoes
  • 1/2 cup grated cheddar cheese
  • 2 tablespoons chopped fresh chives or green onions
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (for coating)
  • Cooking spray or olive oil for greasing

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a baking sheet with cooking spray or olive oil.
  2. In a large mixing bowl, combine the leftover mashed potatoes, grated cheddar cheese, chopped chives or green onions, all-purpose flour, beaten egg, salt, and pepper. Mix until well combined.
  3. Place the breadcrumbs in a shallow dish or plate.
  4. Take a portion of the mashed potato mixture and shape it into a patty or cake. The size and thickness can vary based on your preference.
  5. Coat each potato cake with breadcrumbs, pressing gently to adhere the breadcrumbs to the surface. Place the coated cakes on the prepared baking sheet.
  6. Repeat the process until all of the mashed potato mixture is used, making sure to space the cakes apart on the baking sheet.
  7. Lightly spray the tops of the potato cakes with cooking spray or drizzle a little olive oil over them. This helps them crisp up in the oven.
  8. Bake the mashed potato cakes in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside.
  9. Once baked, remove the potato cakes from the oven and let them cool slightly before serving.
  10. Serve the oven-baked mashed potato cakes warm as a side dish or snack. They pair well with sour cream, ketchup, or your favorite dipping sauce.

These oven-baked mashed potato cakes are crispy on the outside and creamy on the inside, making them a delicious way to enjoy leftover mashed potatoes!
