Apple enchiladas

Apple enchiladas are a delightful dessert that combines the flavors of sweet apples, cinnamon, and caramel wrapped in warm tortillas. Here’s a simple recipe to make apple enchiladas:

Ingredients:

For the Filling:

  • 4-5 medium-sized apples, peeled, cored, and thinly sliced (such as Granny Smith or Honeycrisp)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

For the Enchiladas:

  • 6 (8-inch) flour tortillas
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • Ground cinnamon, for sprinkling (optional)
  • Vanilla ice cream or whipped cream, for serving (optional)

Instructions:

1. Prepare the Apple Filling:

  1. In a large mixing bowl, combine the sliced apples, granulated sugar, ground cinnamon, ground nutmeg, and lemon juice. Toss until the apples are evenly coated. Set aside while you prepare the sauce.

2. Make the Sauce:

  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the granulated sugar, brown sugar, water, and vanilla extract. Bring the mixture to a simmer and cook for 3-5 minutes, stirring occasionally, until the sugars are dissolved and the sauce thickens slightly. Remove from heat and set aside.

3. Assemble the Enchiladas:

  1. Preheat your oven to 350°F (175°C).
  2. Place a spoonful of the apple filling onto the center of each flour tortilla.
  3. Roll up the tortillas tightly and place them seam-side down in a greased baking dish.

4. Pour the Sauce Over the Enchiladas:

  1. Pour the prepared sauce evenly over the rolled-up tortillas in the baking dish, ensuring they are fully covered.
  2. Sprinkle ground cinnamon over the top of the enchiladas, if desired.

5. Bake:

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the enchiladas are heated through and the sauce is bubbly.
  2. Remove the foil during the last 5 minutes of baking to allow the tops to slightly crisp up.

6. Serve:

  1. Once done, remove the apple enchiladas from the oven and let them cool slightly.
  2. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
