No Bake Eclair Cake Recipe

No-Bake Eclair Cake is a delicious and easy-to-make dessert that captures the flavors of traditional eclairs without the need for baking. Here’s a simple recipe for you to try:

Ingredients:

  • 1 box (14.4 oz) graham crackers
  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) frozen whipped topping (such as Cool Whip), thawed
  • 1 can (16 oz) chocolate frosting

Instructions:

  1. In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened, following the package instructions.
  2. Fold in the thawed whipped topping until well combined and creamy.
  3. In a 9×13 inch baking dish, spread a thin layer of the pudding mixture evenly on the bottom of the dish to prevent the graham crackers from sticking.
  4. Arrange a single layer of graham crackers on top of the pudding mixture, breaking them if necessary to fit the dish.
  5. Spread about one-third of the pudding mixture evenly over the layer of graham crackers.
  6. Repeat the layers: another layer of graham crackers, followed by pudding mixture, until you have used up all the pudding mixture. Finish with a final layer of graham crackers on top.
  7. Heat the chocolate frosting in the microwave for about 30-45 seconds, until it is pourable but not too runny.
  8. Pour the warm chocolate frosting evenly over the top layer of graham crackers, spreading it out with a spatula to cover the entire surface.
  9. Cover the baking dish with plastic wrap and refrigerate the eclair cake for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
  10. Before serving, slice the eclair cake into squares or rectangles, depending on your preference.
  11. Serve chilled and enjoy your delicious No-Bake Eclair Cake!
