Instructions:

  1. Combine Dry Ingredients:
    • In a medium saucepan, whisk together the sugar, cornstarch, and salt until well combined.
  2. Whisk in Wet Ingredients:
    • In a separate bowl, whisk together the milk and egg yolks until smooth.
    • Gradually pour the milk mixture into the saucepan with the dry ingredients, whisking constantly to combine.
  3. Cook the Mixture:
    • Place the saucepan over medium heat and cook the mixture, stirring constantly with a whisk, until it thickens and comes to a gentle boil. This usually takes about 5-7 minutes.
  4. Simmer and Stir:
    • Once the mixture starts to boil, reduce the heat to low and continue cooking for another 1-2 minutes, stirring constantly, until it reaches a pudding-like consistency.
  5. Remove from Heat and Add Vanilla:
    • Remove the saucepan from the heat and stir in the vanilla extract until well incorporated.
  6. Cool and Serve:
    • Transfer the pudding to individual serving dishes or a large bowl.
    • Place plastic wrap directly on the surface of the pudding to prevent a skin from forming.
    • Allow the pudding to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until chilled and set.
