Garlic parmesan broiled potatoes make for a delicious and savory side dish. Here’s a simple recipe to make them:

Ingredients:

  • 2 pounds potatoes (such as Yukon Gold or Russet), scrubbed and cut into 1-inch cubes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme (or other herbs like rosemary or parsley)
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat the Broiler: Preheat your oven’s broiler to high. Position the oven rack about 6 inches below the broiler element.
  2. Boil the Potatoes: Place the cubed potatoes in a large pot of salted water. Bring the water to a boil, then reduce the heat and let the potatoes simmer for about 5-7 minutes until they are slightly tender but still firm. Drain the potatoes and pat them dry with paper towels.
  3. Prepare the Garlic Parmesan Mixture: In a small bowl, combine the olive oil, minced garlic, grated Parmesan cheese, dried thyme, salt, and black pepper. Stir well to mix the ingredients thoroughly.
  4. Coat the Potatoes: Place the boiled and dried potato cubes in a large mixing bowl. Pour the garlic parmesan mixture over the potatoes. Toss gently to ensure that the potatoes are evenly coated with the mixture.
  5. Broil the Potatoes: Transfer the coated potato cubes to a baking sheet lined with parchment paper or aluminum foil, spreading them out in a single layer. Place the baking sheet under the preheated broiler.
  6. Broil the Potatoes: Broil the potatoes for about 5-7 minutes, or until they are golden brown and crispy on the edges. Keep an eye on them to prevent burning.
  7. Serve: Once the potatoes are nicely browned and crispy, remove them from the oven. Transfer them to a serving dish and garnish with chopped fresh parsley, if desired. Serve hot and enjoy!
