Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup Erythritol or any keto-friendly sweetener
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup blueberries or chopped nuts

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs, heavy cream, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. If desired, gently fold in blueberries or nuts.
