Zesty steak fajitas are a delicious and flavorful dish that’s perfect for a weeknight dinner or a casual gathering with friends and family. Here’s a recipe to make zesty steak fajitas:Ingredients:

For the marinade:

  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

For the steak:

  • 1.5 lbs (680g) flank steak or skirt steak, thinly sliced against the grain
  • 1 onion, thinly sliced
  • 1 bell pepper (any color), thinly sliced
  • 1 jalapeño pepper, thinly sliced (optional, for added heat)
  • 8-10 small flour tortillas, warmed
  • Optional toppings: diced tomatoes, shredded lettuce, shredded cheese, sour cream, guacamole, salsa, cilantro

Instructions:

  1. In a small bowl, whisk together the lime juice, orange juice, olive oil, minced garlic, ground cumin, chili powder, smoked paprika, dried oregano, salt, and pepper to make the marinade.
  2. Place the thinly sliced steak in a shallow dish or a resealable plastic bag. Pour the marinade over the steak, making sure it’s evenly coated. Cover or seal and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld.
  3. When ready to cook, heat a large skillet or grill pan over medium-high heat. Add a drizzle of olive oil to the pan.
  4. Remove the marinated steak from the refrigerator and let it come to room temperature for about 15-20 minutes.
  5. Once the skillet is hot, add the thinly sliced onion, bell pepper, and jalapeño pepper (if using) to the pan. Sauté for 3-4 minutes, or until the vegetables are softened and slightly charred. Remove the vegetables from the pan and set aside.
  6. In the same skillet, add the marinated steak slices in a single layer. Cook for 2-3 minutes per side, or until the steak is cooked to your desired level of doneness. Avoid overcrowding the pan; you may need to cook the steak in batches.
  7. Once the steak is cooked, return the sautéed vegetables to the skillet and toss with the steak to combine.
  8. Serve the zesty steak fajitas hot, with warmed flour tortillas and your choice of toppings such as diced tomatoes, shredded lettuce, shredded cheese, sour cream, guacamole, salsa, and cilantro.
  9. Enjoy your zesty steak fajitas immediately, and don’t forget to squeeze some fresh lime juice over the top for an extra burst of flavor!
