Chicken and mashed potatoes

Chicken and mashed potatoes is a classic and comforting dish that’s perfect for a hearty meal. Here’s a simple recipe to make chicken and mashed potatoes:

Ingredients:

For the chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup chicken broth

For the mashed potatoes:

  • 2 lbs (about 900g) russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • 1/2 cup milk (or more, as needed)
  • Salt and pepper, to taste
  • Optional: chopped fresh parsley or chives for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown.
  4. Add the minced garlic, dried thyme, and dried rosemary to the skillet with the chicken. Cook for an additional minute until the garlic is fragrant.
  5. Pour the chicken broth into the skillet, scraping up any browned bits from the bottom of the pan. This will add flavor to the sauce.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and no longer pink in the center. The internal temperature of the chicken should reach 165°F (74°C).
  7. While the chicken is baking, prepare the mashed potatoes. Place the peeled and chopped potatoes in a large pot and cover them with water. Bring the water to a boil, then reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are fork-tender.
  8. Drain the cooked potatoes and return them to the pot. Add the butter to the pot and mash the potatoes using a potato masher or a hand mixer.
  9. Gradually add the milk to the mashed potatoes, stirring until they reach your desired creamy consistency. Season with salt and pepper to taste.
  10. Serve the baked chicken alongside the creamy mashed potatoes. Garnish with chopped fresh parsley or chives, if desired.
