Green chili mac and cheese is a delicious twist on the classic comfort food, adding the tangy flavor of green chilies to the creamy richness of macaroni and cheese. Here’s a recipe to make this flavorful dish:Ingredients:

  • 8 ounces (about 2 cups) elbow macaroni or any pasta shape of your choice
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheese (such as sharp cheddar or Monterey Jack)
  • 1 can (4 ounces) diced green chilies, drained
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional toppings: chopped fresh cilantro, sliced green onions, diced tomatoes

Instructions:

  1. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  2. In a large saucepan or Dutch oven, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 1-2 minutes to make a roux.
  3. Gradually whisk in the whole milk, stirring constantly to prevent lumps from forming. Cook until the mixture thickens and comes to a simmer, about 5-7 minutes.
  4. Reduce the heat to low and stir in the shredded cheese until melted and smooth.
  5. Add the drained diced green chilies, ground cumin, garlic powder, salt, and pepper to the cheese sauce. Stir until well combined and heated through.
  6. Add the cooked elbow macaroni to the cheese sauce and toss until the pasta is evenly coated with the sauce.
  7. Cook for an additional 2-3 minutes, stirring occasionally, to allow the flavors to meld together.
  8. Taste and adjust the seasoning as needed, adding more salt and pepper if desired.
  9. Serve the green chili mac and cheese hot, garnished with chopped fresh cilantro, sliced green onions, and diced tomatoes, if desired.
