Italian drunken noodles, also known as “Drunken Spaghetti,” is a flavorful pasta dish featuring spaghetti cooked in a rich tomato-based sauce with Italian sausage and red wine. Here’s a simple recipe to make it:Ingredients:

  • 8 ounces spaghetti
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or hot), casings removed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (red, green, or yellow)
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup red wine (such as Chianti or Merlot)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet or frying pan, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through.
  3. Add the chopped onion, minced garlic, and chopped bell pepper to the skillet with the sausage. Cook for 3-4 minutes until the vegetables are softened and fragrant.
  4. Stir in the diced tomatoes (with their juices), red wine, dried oregano, and dried basil. Season with salt and pepper to taste.
  5. Simmer the sauce for 10-15 minutes, stirring occasionally, to allow the flavors to meld together and the sauce to thicken slightly.
  6. Add the cooked spaghetti to the skillet with the sauce. Toss the spaghetti with the sauce until well coated.
  7. Continue cooking for an additional 2-3 minutes, stirring occasionally, until the spaghetti is heated through.
  8. Serve the Italian drunken noodles hot, garnished with grated Parmesan cheese and chopped fresh parsley, if desired.
