Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil, for cooking
  • Maple syrup, fruit, or other toppings, for serving

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar (if using), baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake, using the back of a spoon to spread it into a circle if needed.
  6. Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges start to look set.
  7. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
  8. Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining pancakes.
  9. Serve the pancakes warm, topped with butter, maple syrup, fruit, or any other toppings you like.
