Strawberry Cheesecake filled with cream

Creating a strawberry cheesecake filled with cream sounds like a delightful twist on a classic dessert. Here’s a recipe to make it:

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 24 oz (about 680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the strawberry cream filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.
  2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom of the prepared springform pan to form the crust. Use the back of a spoon or the bottom of a glass to smooth it out evenly.
  4. In a separate mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until fully combined.
  6. Pour the cheesecake filling over the prepared crust in the springform pan, spreading it out evenly with a spatula.
  7. In a separate mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  8. Gently fold the diced strawberries into the whipped cream until evenly distributed.
  9. Spoon the strawberry cream filling over the cheesecake filling in the springform pan, spreading it out evenly.
  10. Place the springform pan in the preheated oven and bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  11. Turn off the oven and leave the cheesecake inside with the door closed for another hour to cool gradually.
  12. Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to set.
  13. Once set, carefully remove the cheesecake from the springform pan and transfer it to a serving platter.
  14. Slice the strawberry cheesecake filled with cream and serve chilled.
