Spinach Artichoke Stuffed Chicken

Spinach artichoke stuffed chicken is a delicious and elegant dish that’s perfect for a special dinner. Here’s a recipe to make it:Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 cups fresh spinach leaves, chopped
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup breadcrumbs
  • Chopped fresh parsley, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through. Season the chicken breasts with salt and pepper, both inside and outside the pockets.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  4. Add the chopped artichoke hearts to the skillet and cook for an additional 2 minutes, stirring occasionally.
  5. Remove the skillet from heat and let the spinach and artichoke mixture cool slightly.
  6. In a mixing bowl, combine the cooked spinach and artichoke mixture with shredded mozzarella cheese, grated Parmesan cheese, mayonnaise, minced garlic, dried basil, dried oregano, and red pepper flakes (if using). Mix until well combined.
  7. Stuff each chicken breast with the spinach artichoke mixture, dividing it evenly between the pockets.
  8. Place the stuffed chicken breasts in a baking dish sprayed with non-stick cooking spray.
  9. In a small bowl, mix the breadcrumbs with a drizzle of olive oil until well combined. Sprinkle the breadcrumb mixture over the top of each stuffed chicken breast.
  10. Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
  11. Remove the chicken from the oven and let it rest for a few minutes before serving.
  12. Garnish the stuffed chicken breasts with chopped fresh parsley and serve with lemon wedges on the side for squeezing over the chicken, if desired.
