Morning Glory Muffins are a wholesome and delicious way to start your day. They are packed with healthy ingredients like carrots, apples, nuts, and raisins. Here’s a recipe for these flavorful muffins:

Morning Glory Muffins

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup granulated sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup raisins
  • 1 large apple, peeled and grated
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans
  • 3 large eggs
  • 2/3 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1/4 cup orange juice

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, and salt.
  3. Add Mix-Ins:
    • Stir in the shredded coconut, raisins, grated apple, grated carrots, and chopped nuts until well combined.
  4. Mix Wet Ingredients:
    • In a separate bowl, whisk together the eggs, vegetable oil, vanilla extract, and orange juice.
  5. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the muffins tough.
  6. Fill Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake:
    • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool and Enjoy:
    • Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
