Taco Cupcakes

Here’s a fun and tasty recipe for Taco Cupcakes, a great appetizer or party snack that combines the flavors of tacos in a convenient, bite-sized form.

Taco Cupcakes

Ingredients:

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese (or Mexican blend cheese)
  • 1 cup salsa
  • 24 wonton wrappers
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • Optional toppings: sour cream, chopped green onions, diced tomatoes, sliced jalapeños, chopped cilantro

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. Cook the Meat:
    • In a large skillet over medium heat, cook the ground beef or turkey until browned and fully cooked. Drain any excess fat.
    • Add the taco seasoning mix and water to the meat. Stir well and cook for another 2-3 minutes until the sauce thickens. Remove from heat.
  3. Assemble the Taco Cupcakes:
    • Place a wonton wrapper into each cup of the prepared muffin tin, pressing it into the bottom and up the sides.
    • Add a spoonful of cooked taco meat to each wonton wrapper.
    • Top with a few black beans and corn kernels.
    • Add a small spoonful of salsa.
    • Sprinkle a layer of shredded cheese over the top.
    • Place a second wonton wrapper on top of each cup, pressing down gently. Repeat the layers: meat, beans, corn, salsa, and cheese.
  4. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the wonton wrappers are golden brown and the cheese is melted and bubbly.
  5. Serve:
    • Remove the taco cupcakes from the oven and let them cool slightly before removing them from the muffin tin.
    • Garnish with optional toppings like sour cream, chopped green onions, diced tomatoes, sliced jalapeños, and chopped cilantro.

These Taco Cupcakes are sure to be a hit with both kids and adults. Enjoy them as a fun and portable version of classic tacos!
