Here’s a classic vanilla ice cream recipe that yields rich, creamy, and delicious results. This recipe uses an ice cream maker for best results.

Classic Vanilla Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 5 large egg yolks
  • Pinch of salt

Instructions:

  1. Prepare the Ice Cream Base:
    • In a medium saucepan, combine the heavy cream, whole milk, and half of the sugar (3/8 cup). Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.
  2. Mix Egg Yolks and Sugar:
    • In a medium bowl, whisk together the egg yolks and the remaining sugar (3/8 cup) until the mixture is pale and thick.
  3. Temper the Egg Yolks:
    • Slowly pour about 1/2 cup of the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.
    • Gradually add the tempered egg mixture back into the saucepan with the remaining cream mixture, stirring constantly.
  4. Cook the Custard:
    • Cook the mixture over medium heat, stirring constantly with a wooden spoon or a heatproof spatula, until it thickens and coats the back of the spoon (170-175°F or 77-80°C). Do not let it boil.
  5. Strain and Chill the Custard:
    • Remove the saucepan from the heat and strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.
    • Stir in the vanilla extract and a pinch of salt.
    • Allow the custard to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight. The custard must be completely chilled before churning.
  6. Churn the Ice Cream:
    • Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.
  7. Freeze the Ice Cream:
    • Transfer the churned ice cream to an airtight container and freeze for at least 2 hours, or until it is firm enough to scoop.
  8. Serve:
    • Serve your classic vanilla ice cream in bowls or cones. Enjoy it plain, or top with your favorite toppings such as chocolate syrup, sprinkles, or fresh fruit.
