Quick and Delicious Breakfast Pancakes

These quick and delicious breakfast pancakes are fluffy, golden, and perfect for a morning treat. With a few simple ingredients and minimal prep time, you can whip up a batch of pancakes that everyone will love.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Batter:
    • In a large bowl, sift together the flour, baking powder, salt, and sugar.
    • Make a well in the center and pour in the milk, egg, melted butter, and vanilla extract.
    • Mix until smooth. Be careful not to overmix; a few lumps are okay.
  2. Heat the Griddle or Pan:
    • Heat a lightly oiled griddle or frying pan over medium-high heat.
  3. Cook the Pancakes:
    • Pour or scoop about 1/4 cup of batter onto the griddle for each pancake.
    • Brown on both sides, about 2-3 minutes per side, or until bubbles form on the surface and the edges look set before flipping.
  4. Serve:
    • Serve the pancakes hot with your favorite toppings such as butter, maple syrup, fresh berries, or whipped cream.

Tips:

  • Consistency: If the batter is too thick, add a bit more milk. If it’s too thin, add a bit more flour.
  • Add-Ins: Customize your pancakes by adding chocolate chips, blueberries, sliced bananas, or nuts to the batter.
  • Keeping Warm: If making a large batch, keep the pancakes warm in a 200°F (95°C) oven until ready to serve.
  • Freeze for Later: Pancakes freeze well. Place cooled pancakes in a single layer on a baking sheet and freeze. Once frozen, transfer to a zip-top bag. Reheat in the toaster or microwave.
