Apple Pie Biscuits

Apple Pie Biscuits combine the comforting flavors of apple pie with the buttery goodness of biscuits. This delightful treat is perfect for breakfast, brunch, or dessert.

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 3/4 cup buttermilk (or whole milk)

For the Apple Filling:

  • 2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon butter

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or heavy cream
  • 1/2 teaspoon vanilla extract

Instructions:

1. Prepare the Apple Filling:

  • In a medium skillet, melt the butter over medium heat.
  • Add the diced apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until the apples are soft and caramelized, about 8-10 minutes.
  • Remove from heat and let the filling cool slightly.

2. Make the Biscuits:

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  • Add the cold butter cubes and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  • Pour in the buttermilk and gently stir until the dough comes together. Be careful not to overmix.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times. Pat the dough into a rectangle about 1/2-inch thick.

3. Assemble the Biscuits:

  • Spread the apple filling evenly over half of the dough rectangle.
  • Fold the other half of the dough over the apple filling, pressing the edges gently to seal.
  • Use a biscuit cutter or a sharp knife to cut out biscuits from the filled dough. Place the biscuits onto the prepared baking sheet.

4. Bake:

  • Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.

5. Make the Glaze:

  • While the biscuits are baking, whisk together the powdered sugar, milk (or cream), and vanilla extract in a small bowl until smooth.
  • Adjust the consistency with more milk if needed.

6. Serve:

  • Once the biscuits are done, remove them from the oven and let them cool slightly.
  • Drizzle the glaze over the warm biscuits.

Tips:

  • Serve Warm: These biscuits are best enjoyed warm, fresh out of the oven.
  • Add Nuts: For an extra crunch, you can add chopped pecans or walnuts to the apple filling.
  • Storage: Store any leftover biscuits in an airtight container at room temperature for up to 2 days. Reheat them in the oven for a few minutes to enjoy them warm again.
