Apple Pie Coffee Cake

Here’s a delicious recipe for Apple Pie Coffee Cake, a perfect combination of a moist coffee cake with the comforting flavors of apple pie. It’s great for breakfast, brunch, or a dessert!

Apple Pie Coffee Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream (or plain yogurt)

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon

For the Streusel Topping:

  • 1/3 cup all-purpose flour
  • 1/3 cup rolled oats
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or an 8×8-inch square baking dish.
  2. Prepare the Apple Filling:

    • In a small bowl, toss the diced apples with lemon juice, sugar, and cinnamon. Set aside while you prepare the cake batter.
  3. Make the Streusel Topping:

    • In a separate bowl, combine the flour, oats, brown sugar, and cinnamon.
    • Cut the cold butter into small cubes and add it to the dry ingredients. Using a pastry cutter, fork, or your hands, work the butter into the mixture until it resembles coarse crumbs. Set aside.
  4. Make the Cake Batter:

    • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
    • In another bowl, cream together the butter and granulated sugar until light and fluffy.
    • Beat in the eggs, one at a time, then add the vanilla extract.
    • Gradually mix in the dry ingredients, alternating with the sour cream (or yogurt), beginning and ending with the dry ingredients. Mix until just combined.
  5. Assemble the Cake:

    • Pour half of the cake batter into the prepared pan and spread it evenly.
    • Spoon the apple mixture over the cake batter, spreading it out evenly.
    • Top the apples with the remaining cake batter, spreading it gently to cover the apples as much as possible.
  6. Add the Streusel Topping:

    • Sprinkle the prepared streusel topping evenly over the batter.
  7. Bake:

    • Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean, and the top is golden brown. If the topping begins to brown too quickly, cover the cake loosely with aluminum foil and continue baking.
  8. Cool and Serve:

    • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
    • Serve warm or at room temperature.

Serving Suggestions:

  • This Apple Pie Coffee Cake is perfect on its own, or you can dust it with powdered sugar for a simple decoration.
