Baby red potatoes are small, tender potatoes with a thin, red skin and creamy white flesh. They’re versatile and perfect for roasting, boiling, mashing, or even grilling. Here’s a simple and delicious way to prepare them:

Roasted Baby Red Potatoes with Garlic and Herbs

Ingredients:

  • 1 1/2 lbs baby red potatoes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary (or fresh if you have it)
  • 1 tsp dried thyme (or fresh)
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley (optional, for garnish)
  • 1 tbsp grated Parmesan cheese (optional, for added flavor)

Instructions:

  1. Preheat the oven:
    Preheat your oven to 400°F (200°C).

  2. Prepare the potatoes:
    Wash the baby red potatoes thoroughly, scrubbing off any dirt. Cut any larger potatoes in half to ensure they cook evenly, but leave the smaller ones whole.

  3. Toss with seasoning:
    In a large bowl, combine the baby red potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Toss everything until the potatoes are evenly coated in the oil and seasoning.

  4. Roast the potatoes:
    Spread the potatoes in a single layer on a baking sheet, making sure they’re not crowded. This helps them roast evenly and get a crispy exterior.

  5. Bake:
    Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and fork-tender. You can flip them halfway through for even browning.

  6. Garnish and serve:
    Once roasted, remove the potatoes from the oven. Sprinkle with fresh parsley and grated Parmesan (if using). Serve hot and enjoy!

These roasted baby red potatoes are crispy on the outside, soft on the inside, and full of savory flavor. They make a great side dish for meats like chicken, steak, or fish, or even as part of a hearty vegetarian meal. Enjoy!
