Baked Beef Chiles Rellenos Casserole is a hearty and flavorful twist on the classic chiles rellenos dish. This version is much easier to prepare by layering roasted poblano peppers, seasoned beef, and cheese into a delicious casserole that’s baked to perfection.

Baked Beef Chiles Rellenos Casserole Recipe

Ingredients:

  • 6 large poblano peppers (roasted and peeled)
  • 1 lb ground beef
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp oregano
  • Salt and pepper (to taste)
  • 1 ½ cups shredded Monterey Jack cheese (or a mix of cheddar and Monterey Jack)
  • 4 large eggs
  • 1 cup milk
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 1 can (10 oz) red enchilada sauce (optional, for serving)
  • Fresh cilantro (for garnish, optional)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Roast the Poblanos:
    • Roast the poblano peppers by placing them on a baking sheet and broiling them on high for 5-8 minutes, turning them frequently until all sides are charred.
    • Once charred, transfer the peppers to a bowl and cover with plastic wrap or a towel to steam for about 10 minutes. Then, peel off the charred skin, remove the seeds, and set the peppers aside.
  3. Prepare the Beef Filling:
    • In a large skillet, brown the ground beef over medium heat. Add the chopped onion and garlic, cooking until the onion softens (about 4-5 minutes).
    • Stir in cumin, chili powder, oregano, salt, and pepper. Cook for another 2 minutes to combine the flavors. Remove from heat.
  4. Layer the Casserole:
    • In the greased baking dish, lay the roasted and peeled poblano peppers in a single layer to cover the bottom. If needed, slice them open and flatten them to fit.
    • Spread the cooked beef mixture evenly over the layer of poblanos. Sprinkle half of the shredded cheese over the beef.
  5. Prepare the Egg Batter:
    In a medium bowl, whisk together the eggs, milk, flour, and baking powder until smooth. Pour the egg mixture evenly over the beef and cheese layer in the casserole.
  6. Add the Cheese:
    Sprinkle the remaining shredded cheese over the top of the casserole.
  7. Bake:
    Bake in the preheated oven for 30-35 minutes, or until the egg mixture is set and the top is golden and bubbly.
  8. Serve:
    Let the casserole rest for about 10 minutes before serving. Serve with optional red enchilada sauce drizzled on top and garnish with fresh cilantro if desired.
